Mother’s Day: flower basket salad

Make Mother’s Day extra special this year! We reached out to our friend Lydia Menzies, an entertaining expert, for her tips about how to give your mom something extra this year. Lydia is known for her creative flair and love of the tiniest details, so she’s thrilled to offer a way for you to bring a little extra sparkle into your Mother’s Day celebrations and brunch.Part of celebrating Mom on Mother’s Day is making her feel special with a few extra special touches. Brunch is always well-received and appreciated on Mother’s Day.

One of my favorite special touches is to create a flower basket salad to serve.

  1. Simply slice a grapefruit in half
  2. Hollow out each half using a serrated knife and an ice cream scoop
  3. Using a wired faux vine (found at craft stores) or chenille stem, add a basket handle to the grapefruit shells. The wire will go through the skin of the grapefruit and then bend it to secure
  4. Add lettuce leaves to the grapefruit
  5. Top with chicken salad or your mom’s favorite salad/snack
  6. Garnish with edible flowers

And of course, no brunch is complete without some delicious bubbles from Gooseneck Vineyards! Their prosecco pairs so lovely with any savory brunch food and their Brut Rose is the perfect addition to anything else you’re serving or just on its own!
